People who know me know that I’ve been addicted to egg toasts lately. They’re nutritious, quick and easy to make. Worried of getting sick of them? Let’s play mix and match! Here are my FIVE most loved egg toast variations:
- The Classic scrambled egg on toast
Nothing beats a fluffy scrambled egg with a soft but crunchy toast. Don’t forget to sprinkle some salt and black pepper on top for the aroma and aesthetic!

- Creamy egg and cheese toast

Still a scrambled egg, but this time with cheese inside. After the egg is ready, put some cheese on top of the egg, the remaining heat will be able to melt it. My choice of cheese here was tasty cheese, but really any cheese of your own choice would be good.
- Spam and egg sandwich
Scrambled egg and pan fried crunchy spam. Instead of toasting the bread, I prefer leaving it soft this time, as it matches with the texture of the spam. But if you want to add some chewiness in the sandwich, feel free to toast the bread.

- Avocado and Egg toast
Another all time classic – avo and egg toast. I love it with a sunny side up, so far the BEST bread choice is with toasted sourdough (my pick is the potato and rosemary sourdough from Woolworth). Another special ingredient that I add is HONEY!! Try it first before you get skeptical, they match SO well with the flavour of the bread!!

- HK style French Toast
A complete combination of egg and toast! Whisk 2 eggs and milk (or soy milk) together, then dip both sides of the bread into the mixture. After that, pan fry the bread under medium heat for 1 min, then flip it and fry the other side, repeat the process until both sides are golden! I like it best with honey and peanut butter on top!

There are definitely more variations that I have tried and love! They are more complicated so I will leave them for another blog. Hope it gives you inspiration for egg toasts!!
